Asara Passione Pinotage 2017

After thorough hand selection, the chilled grapes were de-stemmed and first subjected to a cold swelling phase that extracted the gorgeous deep purple tones into the wine. This process was followed by an extended cold fermentation on the skins, which allowed the juice of the Pinotage grapes to optimize the concentrated layers of dark and spicy fruit flavors. Once fermentation was complete, the wine remained in tank for an additional two weeks, which imparted powerful tannins to the wine. The wine was then skimmed and transferred to select French oak barrels (100% virgin wood) where the wine completed malolactic fermentation and matured for a further 16 months before the best barrels were selected, blended and bottled as Passione Pinotage.
