Asara Vineyard Collection Cabernet Sauvignon 2017

The grapes for the Asara Cabernet Sauvignon were harvested in the early hours of the morning and on arrival at the winery were first carefully sorted and subjected to a three-day cold swelling phase. The fermentation took place with four daily revolutions, and once fermentation was complete, the berries were pressed in tanks where malolactic fermentation took place at 27 degrees. Finally, the wine matured for 18 months in 300 l French oak barrels, 10% of which were new wood and the rest second and third barrels.
