Bartinney Hourglass Chardonnay 2020

The steep slopes on which the vines grow allow the grapes to ripen at different stages. The grapes were harvested exclusively at full ripeness. On arrival at the winery, the grapes were first crushed, the juice left to rest for two days and then transferred to 225l oak barrels, 50% of which were new wood. The toasting is very light (blond) and the wood grain is particularly firm to avoid too strong toasted and smoky aromas that would otherwisefalss mask the magnificent fruity nuances of the wines. Once fermentation was complete, part of the wine went through spontaneous malolactic fermentation. Finally, the wine matured in barrel for about another 11 months before being racked, blended and bottled.
