Beau Constantia Pas de Nom White 2024

The grapes for Pas de Nom White were hand-picked in the early hours of the morning and, on arrival at the winery, were first left to rest refrigerated overnight before being destemmed, crushed and subjected to sixteen hours of swelling on the skins the next morning before pressing. 17 es of juice were placed in old oak barrels, while the remaining portion was placed in stainless steel tanks, where cool-controlled fermentation began, using selected yeast strands. Once fermentation was complete, the wines were aged on the coarse lees for 9 months, during which the lees were stirred six times (batonnage) to obtain optimal texture in the wine. Finally, the wine aged in wood was blended with the wine aged in steel barrels and the finished cuvée was bottled.
