Benguela Cove Lighthouse Collection Sauvignon Blanc 2022

The grapes for this Sauvignon Blanc were crushed slowly and with great care at a cool, regulated temperature and then left to rest on the skin for 6 hours to achieve the desired acidity. The pure juice then matured for a further 48 hours and fermented at a controlled temperature of 16-18° C and at 12-13° C towards the end of fermentation to preserve the delicious fruit nuances in the wine. The wine was aged exclusively in stainless steel tanks and spent another 60 days on the yeast after the end of fermentation. The yeast was stirred once a week (batonnage) to transfer a more pleasant mouthfeel and a nice complexity to the wine.
