The grapes were harvested by hand and fermented at temperatures between 18 ° C - 21 ° C in temperature-controlled stainless steel tanks with natural yeast. Once the desired sweetness is achieved, fermentation is interrupted by zutat of brandy. Aged in traditional 'canteiro' system in American oak barrels, the wine is slightly warmed and moved over the years from the upper floor to the middle floor and finally to the first floor, where it is cooler and allowed to continue aging until eventual bottling and release.
