Idiom Semillon 2019

The grapes for the idiom Semillon were harvested in the early hours of the morning and immediately transported to the refrigerated cellar, where they were stored overnight at a controlled temperature. The next morning, the grapes were first sorted by bunch before being destemmed and each berry individually selected. The berries were immediately transferred to the press, whereupon the juice obtained was subjected to a three-day rest period. The clear juice was fermented 100% in barrels with the addition of selected yeast cultures and matured in barrels for a further 6 months after the end of fermentation before being bottled lightly filtered.
