Kershaw Clonal Selection Elgin Chardonnay 2020

The grapes for this first-class Chardonnay were harvested by hand on an early autumn morning and transported in 10 kg staircases, which were immediately emptied into the press on arrival at the winery, where they were pressed all over the bunch. The yield of the pressing was kept low at 590 litres per tonne of grapes. The juice flowed directly into the cask by gravity (without the use of any pumps), without separating the juice from any sediment by resting. No enzymes, yeast cultures or acid were added to the unclarified juice, which was then subjected to spontaneous fermentation. The wine rested for 4 months in French oak barrels before being sulphurized with great care and matured in the barrel for a further 7 months. 38% of the barrels used here were made of new wood, the remaining part of second and third wood. Each bottle received its own unique identification number.
