Kershaw GPS Klein River Syrah 2018

The grapes for this first-class Syrah were hand-picked under a clear autumn sky and transported in small staircases to the winery, where they were sorted on a conveyor belt and completely destemmed. The destemmed berries fell onto a vibrating table, where they were again checked for quality, selected for the further production process and filled into small conical funnels in open fermenters. The grapes were macerated for three days until spontaneous fermentation began. Spontaneous means here that only the yeasts naturally occurring in the environment and on the fruit started the fermentation. The berries spent 19 days on the skin, after which the wine was poured into barrels using pure gravitational force and the remaining marc was pressed in the traditional basket press. The malolactic fermentation was completed in barrels, whereupon the wine was allowed to mature for 16 months in barrels made of French Burgundy oak, 43% of which was virgin wood and the remaining portion was second and third wood. After the maturation was completed, the wine was bottled unfiltered.
