Lemberg Chenin Blanc 2021

The hand-picked grapes were transported cool and fresh in the early morning hours in small staircases to the winery, where they were completely destemmed, partially crushed and then subjected to a 48-hour cold swelling phase. The clear juice was skimmed off the lees and a lees strand was added to encourage a slow and even fermentation process. Fermentation at a regulated 16°C continued for three weeks, after which the wine was skimmed off the coarse lees and aged in tank on the fine lees for three months. During the aging process, the fine lees were stirred on and off regularly to add a nice complexity and fullness to the wine. Before bottling, the wine was still slightly stabilized.
