Lemberg Louis Red Blend 2021

The grapes for this dreamlike cuvée were harvested in the cool morning hours and upon arrival in the cellar were hand-sorted and destemmed berry by berry. The Grenache portion was subjected to a 48-hour cold swelling phase before natural fermentation began. Syrah, Mourvedre and Carignan were separately mixed with yeasts and fermented in stainless steel tanks. Syrah and Mourvedre were given an extra two weeks on the skins after completion of fermentation. After fermentation was completed, all wines were pressed separately into barrels and matured for 10 months in a combination of 225l, 300l and 500l French oak barrels. After fermentation was completed, only the best barrels were blended and allowed to continue the production process.
