The grapes were completely destemmed and gently crushed with pure leg power and then left to ferment spontaneously. "Spontaneous" in this context means that no commercial yeasts were added to the grapes to start the fermentation. Only the naturally occurring wild yeasts on the fruit and in the environment initiated the fermentation process. Cabernet and Tannat fermented separately. After the fermentation was completed, the wine went into the traditional basket press, where it was gently pressed and transferred to 300-liter French oak barrels, where it was aged for a total of 18 months before the two grape varieties were blended and the cuvee was bottled unfiltered as well as unfined.
