Mullineux Quartz Chenin Blanc Leliefontein 2019

The grapes for this noble drop were immediately cooled down in the cold room after the harvest and then pressed all over the bunch. The juice was left to rest overnight. An absolute minimum of sulphur dioxide was added as the only addition, as with all Mullineux wines. The juice was put into barrels for fermentation, with the yeast, which occurs wild in the natural environment of the winery, starting the fermentation process "spontaneously". The total fermentation time was 4 weeks. The wine also completed the malolactic fermentation in the barrel and matured for 12 months in third and fourth French oak. The wines were blended unfiltered and bottled for final enjoyment.
