At Paserene, ordinary barrels are not used, as the aim is to achieve exceptional results. Paserene's new barrels are left unroasted for up to five years before being steamed. They are then used to make the wine for 16 months. Winemaker Martin Smith is a precision winemaker who rarely adds anything to his wines, and he chooses not to filter them. He prides himself on spending his time and effort on what goes into the bottle to ensure that what comes out is as authentic as possible.
