Paserene Midnight 2019

After completing the alcoholic fermentation, the wine was aged for 22 months in selected oak barrels, 50% of which were new wood. At Paserene, ordinary barrels are not used because of the desire to achieve exceptional results. Paserene's new barrels remain unroasted for up to five years before being steamed. Winemaker Martin Smith is a precision winemaker who rarely adds anything to his wines, and he chooses not to filter them. He prides himself on spending his time and effort on what goes into the bottle to ensure that what comes out is as authentic as possible.
