Plaisir Estate Chardonnay 2022

The Chardonnay grapes were crushed upon arrival at the cellar, with only the free-run juice collected for further production and left to rest overnight. The next morning, the juice was placed in a combination of French oak barrels with a capacity of 300 liters per barrel (56% new wood, 24% second as well as 20 itt), where fermentation began. Once fermentation was complete, the wine spent another nine months on its lees, with each barrel being rolled regularly and the lees stirred up and down (batonnage) to transfer a nice complexity, well-integrated oak nuances and a good mouthfeel to the wine. Malolactic fermentation took place only partially, giving a more lush style with mild acidity and a full finish.
