After the grapes were pressed all over the bunch, the must was left to rest overnight at a temperature regulated by cooling. The next morning, the juice was transferred to selected French oak barrels where natural fermentation began. Once the alcoholic fermentation was completed, the wine matured on the lees for 7 months before being bottled for final enjoyment.
