Spier Seaward Chenin Blanc 2021

The grapes were hand-picked and transported to the winery, where they were immediately cooled down before being selected, destemmed and crushed by hand. After crushing, the contact on the skin was limited to 4 hours and the freely draining juice was collected and left to rest overnight. 20% of the juice fermented in French oak barrels with a capacity of 300 l per barrel, while the other half vinified in tanks on stainless steel. Once fermentation was complete, both parts were blended in stainless steel tanks, where the chenin spent 6 more months on the lees before being bottled.
