Spier The Yellow Wood Organic White Blend 2020

The grapes for this white wine cuvée of Chenin Blanc and Viognier were hand-picked in the early hours of the morning and transported to the winery in 8 kg stairs. The grapes were cooled in the cellar before being hand sorted with great care. Throughout the winemaking process, there was as little interference with the natural process as possible. The juice was fermented in a combination of stainless steel tanks and French oak barrels, with 100% of the Viognier fermented in wood. The wine then spent another four months on the coarse lees for better structure before being bottled. Made from grapes grown without pesticides or artificial fertilizers.
