The grapes were harvested by hand in the early hours of the morning and fermented separately in stainless steel tanks, depending on the growing location. Each tank was first subjected to a two to three day cold swelling phase before being mixed with selected yeast cultures to start the fermentation process. Once fermentation was complete, malolactic fermentation also took place in steel tanks, where the wine was then aged with French and American oak. A smaller portion of the wine matured in third barrels of French oak.
