Whalehaven Conservation Coast Pinot Noir 2016

The grapes for this elegant Pinot Noir were hand-picked in the early hours of the morning and stored overnight at a regulated 4°C in a cold storage room. The next morning, the grapes were sorted by bunch before being completely destemmed and checked for quality berry by berry. Then the cooling system of the fermentation tanks was switched off to bring the berries naturally to room temperature before adding selected yeasts, which started the fermentation process that lasted for 14 days. Once fermentation was complete, the grapes were pressed and the wine was left to rest for two days, after which malolactic fermentation took place in the cask. Once the malolactic fermentation was completed, the wine was matured for 9-10 months in French barriques and then bottled lightly filtered.
