Hartenberg Riesling 2023

The grapes for this elegant Riesling were harvested at early dawn. During harvesting, berries were picked by hand, one by one, to ensure that only berries with grey mould rot were placed in the basket. The grapes were lightly pressed and left to rest on the skin for 12 hours, stirring occasionally. The grapes were then pressed slowly and with great care. The juice was fermented with the addition of a yeast selected in Austria. The fermentation was interrupted by cooling to achieve the desired sugar-acid balance. Before bottling, the wine was stabilized and filtered. The wine matured for another two years in the bottle before it became available for consumption.
