The grapes were harvested by hand early in the morning and immediately transferred to stainless steel tanks upon arrival at the winery. This was followed by an extended contact on the skins (24 hours) to obtain maximum aromas and nuances in the wine. The juice was transferred to barrels and, for the first time, amphorae for the fermentation process. No new wood was used in this process to ensure that the distinctive characteristics of the specific terroirs were preserved in the wine. Once fermentation was complete, the wine was aged on primary lees for 7 moante before being bottled.
