Land of Hope Syrah 2023

The grapes were harvested by hand, crushed, completely destemmed and placed in large stainless steel fermenters where the must underwent a cold swelling phase on the skins for several days to extract maximum fruit, colour and aromas. In contrast to the usual fermentation at warm temperatures followed by an extended period on the skins, this Syrah was chosen for a cool and spontaneous fermentation and for the immediate removal of the skins after the end of fermentation. The wine was pumped over a maximum of once or twice a day, which favours the extraction of soft tannins and a supple texture. 50% of the wine matured for six months in older French oak barrels (third, fourth and fifth fill) and was blended and bottled with the half matured in steel tanks at the end of the maturation.
