The grapes were harvested in the cool morning hours and cooled down to 4°C on arrival at the winery, before being completely destemmed and sorted berry by berry. The berries were then subjected to a 48-hour cold swelling phase and fermented partly in a spontaneous way without any addition of commercial yeasts.
