Plaisir Estate Sauvignon Blanc 2022

The grapes were hand-picked at optimum ripeness and crushed on arrival at the cellar, fermenting 90% in steel tanks and 10% in barrels. Once fermentation was complete, the wine spent a period of three months on its lees, with regular barrel rolling and stirring of the lees up and down to impart a nice complexity, well-integrated oak nuances and mouthfeel to the wine. Malolactic fermentation was stopped to preserve the crisp and lush acidity in the wine.
