Simonsig Kaapse Vonkel Méthode Cap Classique Brut Rosé 2023

This full-bodied and dry sparkling wine in rosé was produced according to the traditional Méthode Cap Classique, where the delicious and lively perlage is created during the second fermentation in the bottle. Skilful and careful blending of the two grape varieties Pinot Noir and Pinotage give this pearly dream in pink elegance and class. The grapes were gently pressed all over the bunch, after which only the purest and clearest free-run juice was used for further production. The juice fermented at a controlled temperature of 14 - 16°C in stainless steel tanks. The fermentation was initiated by specially selected yeast cultures in order to transfer an optimum of fruit and freshness to the wine.
