Steenberg The Black Swan Sauvignon Blanc 2024

The Black Swan Sauvignon Blanc is a first-class blend from two different vineyards of the winery and a selection of only the best fruit of the vintage. The grapes were completely destemmed, crushed and left on the skin for 18 hours at cool temperatures. The juice was then left to rest for two days before the cool and slow fermentation began. The cool, controlled temperature during the vinification process results in a fresh, yet incredibly full-bodied wine. After fermentation, the wine spent another 9 months on the lees before being bottled slightly stabilized.
