Thelema Sutherland Pinot Noir Reserve 2016

Upon arrival at the winery, the grapes were completely destemmed, hand-sorted and partially crushed, followed by a three-day cold swelling phase. After the mash was mixed with selected yeasts, the cap was submerged twice a day until the desired degree of dryness was achieved. The wine was then put into the press and the resulting wine was filled into French oak barrels, where the malolactic fermentation was completed. Only the best barrels were selected for this reserve wine and matured after blending in 40% new French oak.
