Thorne & Daughters Copper Pot Pinot Noir 2023

In the vinification of Copper Pot Pinot Noir, the process was kept as minimal as possible. Apart from a minimal addition of sulfur during the crushing of the grapes and maturation, no additives were added. The wine fermented spontaneously by the yeast naturally present on the fruit and in the environment. 40 - 60 of the grapes were fermented on the whole bunch, giving the wine a wonderfully natural structure and savory nuances. Extraction was approached incredibly gently with a combination of regular pumping over and manual submersion of the pomace while the wine spent 30 days on the skins. Once fermentation was complete, the wine was aged for nine months in a combination of small French barriques to avoid an overly dominant oak character in the wine as well as to gently round out the structure before all barrels were blended and the wine was bottled.
